What Is the Tourism Return of Developing a Modernist Attitude in Gastronomy?

Abstract

Today, scholars who examine gastronomy from a universal perspective focused on science and art design new directions for culinary science and art through modernist approaches. Studies that position gastronomy only as a traditional attraction in the tourism market tend to follow popular gastronomic movements produced by these new directions. Gastronomy studies in Turkey are also predominantly focused on traditional qualities. This study first establishes a universal gastronomic perspective and then uses document analysis to examine a randomly selected modernist culinary study and related publications. It interprets the modernist culinary approach, evaluates its treatment in the literature and identifies its tourism benefits. The findings indicate that the universal gastronomic perspective should be defined holistically through an interdisciplinary approach and that modernist work centered on science and art creates natural tourism gains in both theory and practice.
