A Study on Hotel Kitchen Employees' Attitudes Toward Occupational Health and Safety and Kitchen Ergonomics

Abstract

This study determines the attitudes of kitchen employees in four-star hotels operating in Tokat and Sivas toward occupational health and safety management systems and kitchen ergonomics measures. It also examines whether attitudes toward ergonomics, occupational health and safety, and their combination differ by duty and gender. Data were collected through face-to-face questionnaires in June 2015. Of 143 questionnaires distributed, 126 were included in the analysis. Absolute and percentage values, arithmetic means and standard deviations were used, while group differences were tested with MANOVA and Tukey's HSD. Employees generally displayed high attitude levels toward kitchen ergonomics and occupational health and safety. Significant differences were found in total attitude scores according to gender and duty.
