Bibliometric Analysis of Graduate Theses Published in the Field of Gastronomy Education

Abstract

Colleges and vocational schools that offer education in the field of gastronomy and culinary arts aim to provide qualified graduates who can meet the needs of the food and beverage industry for specialized workers in the field of gastronomy. Gastronomy education, which includes food preparation, cooking techniques, nutrition and aesthetic knowledge and skills, and is a new academic field offered at different levels worldwide, is becoming increasingly popular. In addition, the number of students who receive education at secondary and especially higher education levels in this field is increasing. The aim of this study is to analyze the postgraduate theses published in the field of gastronomy education in the Higher Education Council National Thesis Center database between 2010 and 2022. The 13 postgraduate publications identified within the scope of the study were examined by content analysis method within the framework of parameters such as types, publication years, universities, departments, advisor titles, topics, research methods, page numbers and keywords. As a result of the analysis, it was found that the majority of postgraduate theses on gastronomy education were at master’s thesis level, generally the theses were written in gastronomy and culinary arts department and there was almost a balanced distribution in terms of research methods used in the theses. It is thought that the results of the study will contribute to the literature and guide future studies.
